Cake Decoration 101: Perfect Frosting

There can't be many things in life that are quite as wonderful as creating the perfect cake and enjoying it with your whole family, and a big part of great cake decoration is creating the perfect frosting. After all, that's where all the flavour is! Wonderful as frosting is, however, there are a few mistakes that can be made when you're making it, and that's why we've come up with these tips on creating the perfect frosting every time:
Ensure you prepare the cake. One of the biggest mistakes that many people make when frosting a cake is to simply slap it straight on. This is a bad idea! Not only should you take the time to ensure that the cake is leveled off (cakes will usually 'dome' when cooked), you should ensure that it has completed cooled down by the time you apply the frosting. If not, you will likely end up with some very runny frosting sliding off the cake and onto your kitchen surfaces!
Don't overdo the frosting. With frosting being as insanely tasty as it is (especially if it's chocolate based!), it can be tempting to slather tonnes of it all over the top of the cake and then all through the middle. However, try and resist this urge (however hard it may be), as overdoing the frosting will usually lead to the cake ending up as a bit of a mess, and will also make the flavour far too overwhelming. As with any form of food creation, the key to the whole thing is finding the right balance. Get it right, and you'll be enjoying some great cake!
Do the filling first. This might seem obvious, but you'd be surprised at the mistakes that some people make in terms of frosting in the right order! Applying the filling first is important - it should be at room temperature unless it involves cream - and ensure that you spread it evenly across the lower half of the cake. Needless to say you should stick to the above rule of not applying too much, otherwise you'll end up with the over-full sandwich effect!
Don't forget the crumb coat. The last thing you want to do when you've spent ages creating the perfect frosting is to end up with some rather unsightly crumbs ruining the effect! That's why you should apply what's known as a 'crumb coat' first. This is a very thin layer of frosting applied before the rest to help remove all of the crumbs that would otherwise come off, and to then provide a smoother layer for you to conduct the rest of the cake decoration.
Use the right consistency. Consistency is a big deal when it comes to most areas of cake decoration, and this is certainly the case when it comes to frosting. Whilst frosting is incredibly versatile, making sure it's of the right viscosity is a great idea. Stiffer frosting is great for more elaborate shape creation, where as writing or printing is best performed by the thinner variety.

Recipe for an Old-Fashioned Family Favorite - Citrus Raisin-Walnut Lattice Pie

Do you have fond memories of grandma's pies? Did you ever watch her fingers magically making a lattice crust to top her mouth watering pies? I know I did and I was in awe of how pretty that made her pies and how enticing they look with the shiny fruit filling showing through. But when I grew up, I decided all that fancy stuff was too much work. So I would slap a sheet of dough over my pies, cut three or four little air vents and call it quits. Yet many years later when I see a lattice pie it brings a smile to my face. There was an old country church across from my grandparent's house and I lived next door to my grandparents.
There was a huge black walnut tree in front of the church. My grandparents had an agreement with the church leaders that they would keep the walnuts picked up. If you have never helped to gather black walnuts or to crack them and pick out the nut meats, you have no idea what you have missed. Yuck, is the best way to describe the chore. The black outer shell of the nuts does rub right off on your hands. My sister and I hated that job but we sure did enjoy eating those nuts in cakes, candies, and pies throughout the year. Why not go back to your childhood, in memory, with this recipe for an old-fashion Citrus Raisin-Walnut Lattice Pie. Top is with homemade vanilla ice-cream for a real old time treat!
CITRUS LATTICE RAISIN-WALNUT PIE
1 cup brown sugar, packed tight
2 tablespoons cornstarch
2 cups raisins
1 1/3 cups cold water
1/2 teaspoon finely grated orange peel
1/2 cup fresh orange juice
1/2 teaspoon finely grated lemon peel
2 tablespoons fresh lemon juice
1/2 cup chopped walnuts
Pastry enough for a two crust pie
In a medium saucepan combine the brown sugar with the cornstarch. When combined, stir in the raisins, water, orange juice, lemon juice, orange peel and lemon peel. Over a medium heat cook and stir until thickened and bubbly. Cook 1 more minute stirring the whole time. Remove the pan from the heat and stir in the walnuts.
Roll out about half of the pastry dough and use it to line a 9-inch pie pan. Trim to about a half of an inch over the edge. Pour the raisin mixture into the shell. Cut the last half of the dough into strips about a half in wide. Weave the strips over the top of the pie to make a lattice design. Seal and flute the edges. To prevent burning, cover the edge of pie with strips of aluminum boil or a pie shield.
Bake at 375 degrees for 20 minutes. Carefully remove the foil and bake another 20 minutes or until the crust is golden brown. Allow pie to cool before cutting. Serve pie wedges with homemade ice cream or whipped cream, if you choose.

Who doesn't like great desserts? Whether you want to finish off the meal with something special, need to take a dessert to some occasion, or just want a good dessert to enjoy with coffee, turn to cherries. They are not only tasty and suitable to various style desserts, they make very pretty desserts. The recipes in this article are for some tasty cherry treats. Cherry casserole cake is made in a two-quart casserole dish and there is no frosting needed. The Easy Cherry Squares I added to my old fashion recipe collection many years ago from a friend from Kansas. When were in the military, we met and shared recipes with friends from many different parts of the country. It is fun to go back approximately fifty years later and enjoy those recipes. They always bring back happy memories of military days.
CHERRY CASSEROLE CAKE
2 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, beaten
1 cup milk
1 teaspoon almond extract
1/4 cup cooking oil
1 can (1 lb 5-oz)cherry pie filling
Preheat oven to 350 degrees. Grease a 2-quart casserole dish.
Stir together dry ingredients. Blend eggs, milk, 1/2 teaspoon almond extract, and oil. Add the liquid, all at once, to the flour mixture, stirring only until the flour is moistened.
Spread 1 cup of the cherry pie filling over the bottom of the greased dish. Pour the batter over the pie filling. Bake in the 350 degree preheated oven. Bake 45 to 55 minutes or until done with toothpick test.
Cool 10 minutes before inverting onto a serving platter. Combine the remaining cherry pie filling and half teaspoon almond extract. Heat and serve over cake.
EASY CHERRY SQUARES
This recipe is from 1950s Iowa.
1 1/2 cups granulated sugar
1 cup butter
4 eggs
2 cups all-purpose flour
1 tbsp lemon juice
1 can cherry pie filling (or your choice)
Preheat oven to 350 degrees. Generously grease a 16 x 20-inch jelly roll pan and set aside.
In a large mixer bowl, gradually add the sugar to the butter creaming at medium speed until light and fluffy. Add the eggs, one at a time, beating well at low speed after each addition. Add the flour and lemon juice and mix until well combined. Pour the mixture evenly onto the prepared jelly roll pan. Mark off 15 servings by making three across and five down. Place a heaping tablespoon of the pie filling in the center of each of the 15 sections. Bake at 350 degrees for 25 to 30 minutes until lightly browned. Remove from the oven and sprinkle powdered sugar over all.

OLD FASHION PINEAPPLE UPSIDE DOWN CAKE
1 #2 can of sliced pineapple
1 cup sugar
1/2 cup shortening
2 eggs, well beaten
2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
4 tbsp butter
1 cup packed brown sugar
Maraschino cherries
Preheat oven to 350 degrees.
Drain the pineapple, reserving 3/4 cup of the syrup.
In a mixer bowl, cream the sugar and shortening together; add the eggs and beat in.
Sift the flour, baking powder and salt into the creamed mixture alternately with the reserved 3/4 cup of the pineapple syrup. Mix together well. Melt the butter in a 9 x 13-inch baking pan. Stir the brown sugar into the butter and spread out evenly over the bottom of the pan. Arrange the pineapple slices over the buttery mixture. Place a maraschino cherry in the center of each pineapple ring. Pour the batter evenly over the pineapple slices.
Bake at 350 degrees for 50 minutes.
CHEESECAKE BROWNIES
1 pkg traditional family size brownie mix
1 brick (8-oz) cream cheese, softened
1/3 cup sugar
1 egg
1/2 tsp vanilla
Preheat oven to 350 degrees.
Spray a 9 x 13-inch baking pan with non-stick cooking spray; set aside.
Make the brownie mix as directed on the package and pour into the prepared baking pan.
Beat the cream cheese, using an electric mixer at medium speed, until smooth. Add the sugar, continuing to mix until blended. Add the egg and vanilla; mix just until blended. Pour this mixture over the brownie mixture in the pan. Using a butter knife, cut through the mixtures to make a marbled effect.
Bake for 35 to 40 minutes or until the cream cheese parts are lightly browned. Allow to cool before cutting into 24 brownies.

Slice pound cake into individual slices. Pour powdered glaze over the slice of cake. Garnish with the fresh strawberries and blueberries.
Note: Use a large star cookie cutter and cut cake slices into star shapes, if desired, for a patriotic dessert.
To make a powdered sugar glaze, mix a pound of powdered sugar with a small amount of milk or cream and a half teaspoon of butter flavoring or vanilla extract. Use as much milk or cream as needed for the consistency you prefer.
DREAMY PRALINE PIE
1/2 cup chopped pecans
1/3 cup butter
1/3 cup firmly packed light brown sugar
1 ready-made graham cracker pie crust
2 envelopes whip topping mix
2 3/4 cups cold milk, divided
1 tsp vanilla extract
2 pkgs (4-serving size each) Vanilla Flavor Instant Pudding and Pie Filling Mix
In a small saucepan, heat the nuts, butter, and brown sugar together until the butter and sugar are melted and the mixture comes to a boil. Boil for 30 seconds. Spread the mixture over the bottom of the prepared pie shell and allow to cool.
In a large mixing bowl, beat the whipped topping mix with 1 cup of the milk and the vanilla extract with electric mixer on high speed. Beat for about 6 minutes or until the topping becomes thick and forms soft peaks. Add the remaining 1 3/4 cups of milk along with the pudding mix; blending on low speed. When combined, beat on high speed for 2 minutes, scraping bowl down occasionally.
Spoon the filling into the crust atop the praline layer. Refrigerate for at least four hours or until serving time. Before serving, add a dollop of whipped cream and/or a pecan half to each wedge for garnish, if desired.

Oh So Peachy Pies: Kentucky Deep-Dish, Crumble, and a Single Crust Pie Pastry Recipes

KENTUCKY DEEP-DISH PEACH PIE
1 unbaked pie shell
4 large fresh peaches, halved
1 1/4 cup sugar
1/2 cup packed brown sugar
1 stick butter
3 eggs, beaten
Line a deep dish pie pan with the pastry dough. Place the peaches over the pastry dough, cut side up. Sprinkle 1 cup of the sugar over the peaches. Bake at 400 degrees until peaches are tender.
Cream the remaining 1/4 cup of sugar, brown sugar, and the butter in a small bowl. Add the eggs and mix well. Pour the mixture over the peaches and bake until set.
CRUMBLE FRESH PEACH PIE
1 unbaked pie shell
5 large ripe but firm peaches, peeled and halved
1 cup sugar
1/3 cup butter, slightly softened
1/3 cup flour
Preheat oven to 400 degrees.
Place pastry shell in pie plate. Arrange peach halves in shell, cut side up. Mix the sugar, butter, and flour together until the mixture resembles coarse cornmeal; sprinkle over the peaches.
Bake for 10 minutes at 400 degrees. Reduce temperature to 350 degrees and bake another 30 to 40 minutes until golden brown and peaches are fork tender.
CLASSIC SINGLE PIE CRUST
1 1/3 level cups all-purpose flour
1/2 level teaspoon salt
1/2 level cup quality solid shortening
3 tablespoons cold water (add more by the drop, if needed)
Spoon the flour into measuring cups and level. Mix flour and salt in a medium bowl.
Cut in the shortening using a pastry blender* until all flour is blended in to form pea-size chunks. Sprinkle with the water, one tablespoon at a time. Toss lightly with fork until dough will form a ball.
Press dough between hands to form a 5 to 6-inch disc. Using a rolling pin, roll dough out to a circle. Lay pie pan upside down on dough and cut dough 1-inch larger than the pan. Loosen dough from surface carefully, lightly folding into fourths. Place in center of pan, unfold and press onto bottom and sides. Fold the edge under and flute or trim as you desire.
For a baked pie shell, preheat oven to 425 degrees. Using a fork, thoroughly prick bottom and sides to prevent shrinking. Bake at 425 degrees for 10 to 15 minutes or until lightly browned.
For an unbaked pie shell, follow pie directions.
